We’re starting with a total crowd-pleaser: Butternut Squash Spice Cake with Maple Glaze. Seriously, it’s SO good. Moist, flavorful, and topped with a sweet maple glaze – what more could you want in a fall dessert? 😍
What I love most about this cake is its versatility. If you don’t have butternut squash, you can easily use sweet potato or pumpkin puree instead. But let me tell you, that butternut squash flavor paired with the maple glaze? It’s a game-changer. I mix this one by hand (no electric mixer needed!) because it’s the best way to avoid over-mixing delicate flours like almond and brown rice flour.

These make for the perfect lunchbox or after-school snacks, and I love having something nutrient-dense on hand that the whole family can enjoy. (I think my kids love these even more than I do!)

Alright, now let’s switch things up with something savory. You have to try my Rosemary Pumpkin Parmesan Biscuits. 🥰 They are perfect for pairing with any fall soup or stew – I’m thinking a pumpkin or butternut squash chili. These biscuits have a fluffy, tender texture with just a hint of sweetness from the pumpkin, balanced by the savory rosemary and parmesan.
To get that perfect biscuit texture, I use chilled coconut oil and work it into the dough with my fingers. Yes, it’s a little extra work, but trust me, it’s so worth it. And when you take that first bite? Total heaven. 😋
Sweet Potato Chocolate Chip Blondies & Cinnamon Swirl Pumpkin Cake 🍫🎃
A few days later, I was back in the kitchen for the final two recipes. First, the Sweet Potato Chocolate Chip Blondies. They’re fudgy, delicious, and so easy to whip up. I use brown rice flour, coconut sugar, and pureed sweet potato to keep them moist and chewy. My tip? Don’t over-mix! It’s key to keeping that lovely blondie texture.
Lastly, I baked up a Cinnamon Swirl Pumpkin Cake. Ladies, this one is a must for fall brunches or cozy family gatherings. It has that perfect cinnamon-sugar swirl that just screams autumn. 🍂 One little tip: work quickly when making the swirl so that the coconut oil doesn’t set too soon.
